What You'll Need

  • 1 cup fresh pecan halves (roughly chopped)
  • 2 cups all-purpose flour
  • 1½ cups granulated sugar
  • 1 cup unsalted butter (softened)
  • 3 large eggs
  • 1 cup sour cream
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • Optional: ½ cup brown sugar + 1 tsp cinnamon for a pecan swirl

How to Make It

  1. Preheat your oven to 325°F. Grease and flour a bundt pan or 9x13 baking dish.
  2. Cream butter and sugar together until light and fluffy, about 3–4 minutes.
  3. Add eggs one at a time, mixing well after each. Stir in vanilla.
  4. Mix dry ingredients (flour, baking powder, baking soda, salt) in a separate bowl.
  5. Alternate adding dry ingredients and sour cream to the butter mixture, starting and ending with flour.
  6. Fold in pecans. If using the swirl, layer half the batter, sprinkle brown sugar + cinnamon + pecans, then top with remaining batter.
  7. Bake 50–60 minutes or until a toothpick comes out clean. Cool before slicing.
