How to Tell If Your Pecans Are Fresh
 
Here's a simple test:
• Squeeze one. A fresh pecan is firm. An old one is rubbery or soft.
• Smell it. Fresh pecans smell nutty and sweet. Old ones smell like cardboard or paint.
• Taste it. Fresh pecans are crisp and buttery. Old ones taste flat or slightly bitter. 
If your pecans fail any of those tests, they've been sitting too long.

This is why I stopped ordering from big companies and started paying attention to who actually grows and shells the pecans.
