Pistachio Honey Cake

- 1 cup shelled unsalted pistachios
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 3/4 cup sugar
- 2 large eggs
- 1/4 cup honey
- 1 teaspoon vanilla extract
- 1/2 cup milk
For the Glaze:
- 1/4 cup honey
- 1/4 cup water
- 1 tablespoon lemon juice
- Chopped pistachios for garnish
Instructions:
1. Preheat Oven:
   - Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round cake pan.
2. Prepare the Pistachios:
   - Place the pistachios in a food processor and pulse until finely ground. Be careful not to over-process them into a paste.
3. Mix Dry Ingredients:
   - In a medium bowl, combine the ground pistachios, flour, baking powder, and salt. Mix well.
4. Cream Butter and Sugar:
   - In a large mixing bowl, beat the softened butter and sugar together until light and fluffy, about 3-4 minutes.
5. Add Eggs, Honey, and Vanilla:
   - Add the eggs, one at a time, beating well after each addition. Mix in the honey and vanilla extract.
6. Combine Wet and Dry Ingredients:
   - Gradually add the dry ingredients to the wet mixture, alternating with the milk. Begin and end with the dry ingredients. Mix until just combined.
7. Bake:
   - Pour the batter into the prepared cake pan and smooth the top. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
8. Prepare the Glaze:
   - While the cake is baking, prepare the glaze. In a small saucepan, combine the honey, water, and lemon juice. Bring to a boil, then reduce the heat and simmer for 5 minutes. Remove from heat and let it cool slightly.
9. Glaze the Cake:
   - Once the cake is done, remove it from the oven and let it cool in the pan for 10 minutes. Transfer the cake to a wire rack. While the cake is still warm, brush the glaze over the top and sides.
10. Garnish and Serve:
    - Sprinkle chopped pistachios on top for an extra crunch. Let the cake cool completely before serving.
